Ingredients
- 1 pkg. frozen mixed vegetables
- 1/2 c. finely chopped celery
- 1/2 c. finely chopped onion
- 1/2 c. Hellmann's mayonnaise
- 1/3 c. cubed Velveeta cheese
- 1 c. crushed Ritz crackers
- 1/3 c. grated Parmesan cheese
Method
- Cook vegetables as directed and drain well.
- Add the celery, onion, cheese, mayo and salt and pepper to taste.
- Spoon the mixture into a greased 2-quart casserole dish.
- Sprinkle with the Parmesan cheese.
- Bake for 30 minutes at 300°.
- Top with crushed crackers and bake an additional 10 minutes.
