Ingredients

  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 1/2 c. milk
  • 3/4 c. cooked spinach, chopped fine
  • 1/2 c. grated sharp cheese
  • 3 egg yolks, beaten
  • 1/2 tsp. salt
  • pepper to taste
  • 3 egg whites

Method

  • Preheat oven to 350°.
  • Make cream sauce of butter, flour and milk.
  • Add sauce to spinach and cheese, and beaten egg yolks; mix. Beat egg whites until stiff, but not dry.
  • Fold into mixture. Pour in buttered casserole.
  • Set in hot water.
  • Bake 30 minutes. Let stand a few minutes after removing from oven.
  • Serves 6.
