Ingredients

  • 1 c. canned evaporated milk
  • 1 egg, beaten
  • 1 Tbsp. sugar
  • 1 Tbsp. flour
  • 1 lb. Velveeta cheese food, cubed
  • 2 eggs, hard-cooked and chopped fine
  • 1 small onion, finely chopped
  • pimento (optional)
  • 1 Tbsp. vinegar

Method

  • In
  • double boiler, combine evaporated milk, beaten egg, flour and
  • sugar.
  • Cook, stirring until hot.
  • Add cheese and cook stirring occasionally, until smooth.
  • Stir in hard-cooked eggs, onion
  • and pimento,
  • if desired.
  • Remove from heat and cool completely.
  • Stir in vinegar and transfer to jars. Store covered in refrigerator.
