Ingredients

  • 1 (16 oz.) pkg. sharp Cheddar cheese, shredded
  • 1 (16 oz.) pkg. medium Cheddar cheese, shredded
  • 1 small onion, grated
  • 1 c. mayonnaise
  • 1 Tbsp. red pepper
  • 1 c. chopped pecans
  • parsley sprigs
  • strawberry preserves

Method

  • Combine first 5 ingredients and mix well.
  • Sprinkle 1/4 cup pecans in an oiled 7-cup ring mold and press cheese mixture into mold.
  • Chill until firm.
  • Unmold on platter and pat remaining pecans onto cheese ring.
  • Garnish with parsley sprigs.
  • Serve on crackers with strawberry preserves.
