Ingredients

  • 2 eggs, lightly beaten
  • 1/4 c. melted oleo, cooled
  • 1 tsp. salt
  • 1/2 tsp. baking soda
  • 1 c. canned cream-style corn
  • 1/2 c. minced green onions
  • 1 c. plain yogurt
  • 1 c. cornmeal
  • 1 tsp. baking powder
  • 1 c. grated Monterey Jack cheese
  • 4 oz. can chopped green chilies

Method

  • Heat oven to 400°.
  • Whisk together eggs, yogurt and oleo in a medium bowl. Add dry ingredients and mix until just well blended. Add remaining ingredients; mix well.
  • Pour into greased 10-inch heavy skillet and bake 40 minutes.
