- 2 eggs, lightly beaten
- 1/4 c. melted oleo, cooled
- 1 tsp. salt
- 1/2 tsp. baking soda
- 1 c. canned cream-style corn
- 1/2 c. minced green onions
- 1 c. plain yogurt
- 1 c. cornmeal
- 1 tsp. baking powder
- 1 c. grated Monterey Jack cheese
- 4 oz. can chopped green chilies
Method
- Heat oven to 400°.
- Whisk together eggs, yogurt and oleo in a medium bowl. Add dry ingredients and mix until just well blended. Add remaining ingredients; mix well.
- Pour into greased 10-inch heavy skillet and bake 40 minutes.
