Ingredients

  • graham cracker crumbs (2 crackers)
  • butter
  • 4 eggs
  • 4 (8 oz.) pkg. Philadelphia cream cheese
  • 1 3/4 c. sugar
  • 1 tsp.vanilla
  • 1 lemon, juice and rind

Method

  • Lightly butter an 8-inch spring-form pan, coat with graham cracker crumbs.
  • Mix all ingredients together, except lemon juice, no more than five minutes of mixing.
  • Add lemon juice and rind slowly.
  • Pour mixture into prepared pan; bake in a pan of water at 325° for 1 1/2 hours.
  • Turn oven off, let rest in oven 1/2 hour. Refrigerate when cool.
