- 4 Tbsp. graham cracker crumbs
- 2 envelopes unflavored gelatin
- 1 c. lo-cal pineapple tidbits (reserve juice)
- 1 1/2 c. low-fat cottage cheese
- 3 eggs, separated
- 1/4 c. nonfat milk
- 2 Tbsp. lemon juice
- sweetener = 1/2 c. sugar
- 1 tsp. vanilla
- 1/4 tsp. salt
Method
- Sprinkle 3 tablespoons crumbs in 9-inch pan; set aside. Soften gelatin in 1/2 cup cold water.
- Add water to pineapple juice to make 3/4 cup.
- Bring to a boil; stir in gelatin.
