Ingredients
- 2 pkg. (8 oz.) cream cheese
- 1 1/2 c. coconut
- 1 jar (12 oz.) apricot preserves/jam
- 1 1/2 c. slivered almonds
Method
- Soften cream cheese.
- Beat with jam until smooth.
- Shape into a ball.
- Freeze for 30 minutes.
- Meanwhile, toast almonds and coconut in oven set at 425°.
- Watch closely.
- Roll ball in the browned mixture.
- Refrigerate overnight before serving.
