Ingredients

  • 2 cups flour
  • 7 tbsp butter
  • 1/3 cup lard
  • 3 None onions, chopped
  • 4 1/2 cups grated Cheddar cheese
  • 2 None eggs
  • 1/3 cup milk or cream
  • None None Chopped chives, to garnish (optional)

Method

  • Grease a 9-inch tart pan with a removable bottom. Sift the flour into a bowl.
  • Heat half the butter, the lard and 1/2 cup water in a small saucepan until the butter and lard have melted. Add to the flour. Mix with a wooden spoon until a smooth dough has formed. Bring together with your hands to form a ball. Wrap in plastic wrap and refrigerate for 10 mins.
  • Meanwhile, melt the remaining butter in a skillet on medium heat. Add the onions and cook for 5 mins until translucent. Transfer to a large bowl. Cool slightly. Stir in the cheese.
  • Beat the eggs and milk or cream in a small bowl. Season to taste with salt and pepper. Add to the onion and cheese mixture and stir to combine. Set aside.
  • Roll out the pastry on a lightly floured work surface. Line tart pan with pastry; trim edges. Refrigerate for 10 mins. Preheat the oven to 350°F.
  • Fill the tart crust with the cheese and onion mixture. Bake for 50 mins until golden and the pastry is crisp. Serve garnished with chopped chives (if using).
