- 1/2 lb. shredded Mozzarella cheese
- 1/2 lb. shredded Cheddar cheese
- 1/4 lb. chopped mushrooms
- 1 (2 1/2 oz.) can sliced black olives
- 1/4 c. chopped onion
- 1/4 c. chopped celery
- 1/2 c. bread crumbs
- 6 oz. cottage cheese
- 1 egg, slightly beaten
- 1/4 c. milk
- 2 Tbsp. chopped parsley
- 4 c. spaghetti sauce
- 1 (8 oz.) pkg. manicotti (do not cook)
Method
- Combine all ingredients except manicotti and spaghetti sauce and set aside.
- Mix the spaghetti sauce with 1 cup of water. Place half in a 9 x 13-inch pan.
- Stuff the manicotti shells with mixture and place in tomato sauce in pan.
- Pour remaining sauce on top.
- Cover with foil and bake 1 hour at 375°.
- Remove foil and sprinkle with grated cheese and place in oven until melted.
