Ingredients

  • 1/2 lb. shredded Mozzarella cheese
  • 1/2 lb. shredded Cheddar cheese
  • 1/4 lb. chopped mushrooms
  • 1 (2 1/2 oz.) can sliced black olives
  • 1/4 c. chopped onion
  • 1/4 c. chopped celery
  • 1/2 c. bread crumbs
  • 6 oz. cottage cheese
  • 1 egg, slightly beaten
  • 1/4 c. milk
  • 2 Tbsp. chopped parsley
  • 4 c. spaghetti sauce
  • 1 (8 oz.) pkg. manicotti (do not cook)

Method

  • Combine all ingredients except manicotti and spaghetti sauce and set aside.
  • Mix the spaghetti sauce with 1 cup of water. Place half in a 9 x 13-inch pan.
  • Stuff the manicotti shells with mixture and place in tomato sauce in pan.
  • Pour remaining sauce on top.
  • Cover with foil and bake 1 hour at 375°.
  • Remove foil and sprinkle with grated cheese and place in oven until melted.
