Ingredients

  • 2 medium potatoes, baked
  • 4 Tbsp. cottage cheese
  • 4 Tbsp. Cheddar cheese, grated
  • 4 Tbsp. green chopped onions (including green portion)
  • 4 Tbsp. plain yogurt
  • 1 tsp. dried dill weed
  • paprika

Method

  • Preheat oven to 350°.
  • Cut prebaked potatoes in half.
  • Spoon out center of potatoes being careful not to break shells.
  • Blend yogurt, cottage cheese, Cheddar cheese and dill weed until smooth but not creamy using an electric mixer or fork.
  • Add green onion. Spoon mixture into potato shells.
  • Sprinkle tops with paprika. Place in oven for 15 to 20 minutes until heated throughout.
