Ingredients
- 2 medium potatoes, baked
- 4 Tbsp. cottage cheese
- 4 Tbsp. Cheddar cheese, grated
- 4 Tbsp. green chopped onions (including green portion)
- 4 Tbsp. plain yogurt
- 1 tsp. dried dill weed
- paprika
Method
- Preheat oven to 350°.
- Cut prebaked potatoes in half.
- Spoon out center of potatoes being careful not to break shells.
- Blend yogurt, cottage cheese, Cheddar cheese and dill weed until smooth but not creamy using an electric mixer or fork.
- Add green onion. Spoon mixture into potato shells.
- Sprinkle tops with paprika. Place in oven for 15 to 20 minutes until heated throughout.
