Ingredients
- 1/2 c. firmly packed, chopped bacon
- 1 large onion, chopped
- 1 1/2 lb. boiled, cooled and peeled potatoes, cut into 1/2-inch cubes
- 3 large, hard-cooked eggs
- 1/2 c. Cheddar cheese cubes
- 1/2 c. mayonnaise
- 2 tsp. mustard
- salt and pepper
Method
- In frying pan, cook chopped bacon over medium heat, stirring until crisp.
- Remove bacon from pan with a slotted spoon and put into a large bowl.
- Add the onion to pan and cook until limp.
- Lift out with a slotted spoon; add to bacon.
- Discard fat.
- Add potatoes, eggs, cheese, mayonnaise and mustard to the bacon and stir until evenly mixed.
- Season with salt and pepper.
- Serve or cover and chill overnight.
- Yields 6 servings.
