Ingredients

  • 1/2 c. firmly packed, chopped bacon
  • 1 large onion, chopped
  • 1 1/2 lb. boiled, cooled and peeled potatoes, cut into 1/2-inch cubes
  • 3 large, hard-cooked eggs
  • 1/2 c. Cheddar cheese cubes
  • 1/2 c. mayonnaise
  • 2 tsp. mustard
  • salt and pepper

Method

  • In frying pan, cook chopped bacon over medium heat, stirring until crisp.
  • Remove bacon from pan with a slotted spoon and put into a large bowl.
  • Add the onion to pan and cook until limp.
  • Lift out with a slotted spoon; add to bacon.
  • Discard fat.
  • Add potatoes, eggs, cheese, mayonnaise and mustard to the bacon and stir until evenly mixed.
  • Season with salt and pepper.
  • Serve or cover and chill overnight.
  • Yields 6 servings.
