Ingredients

  • 2-1/2 cups prepared fruit (buy about 2 lb./900 g fully ripe peaches)
  • 4-1/2 cups sugar, measured into separate bowl
  • 1 Tbsp. vanilla bean paste
  • 1 pouch Certo Liquid Pectin
  • 3 Tbsp. fresh lemon juice

Method

  • Peel and pit peaches.
  • Finely chop or grind peaches.
  • Measure exactly 2-1/2 cups prepared fruit into large bowl.
  • Add sugar and vanilla bean paste; mix well.
  • Let stand 10 min., stirring occasionally.
  • Add pectin and lemon juice; stir 3 min.
  • or until most the sugar is dissolved and no longer grainy.
  • (A few sugar crystals may remain.)
  • Pour into clean jars or plastic containers; cover with tight-fitting lids.
  • Let stand at room temperature 24 hours or until set.
  • Freeze up to 1 year or refrigerate up to 3 weeks.
