Ingredients
- 2-1/2 cups prepared fruit (buy about 2 lb./900 g fully ripe peaches)
- 4-1/2 cups sugar, measured into separate bowl
- 1 Tbsp. vanilla bean paste
- 1 pouch Certo Liquid Pectin
- 3 Tbsp. fresh lemon juice
Method
- Peel and pit peaches.
- Finely chop or grind peaches.
- Measure exactly 2-1/2 cups prepared fruit into large bowl.
- Add sugar and vanilla bean paste; mix well.
- Let stand 10 min., stirring occasionally.
- Add pectin and lemon juice; stir 3 min.
- or until most the sugar is dissolved and no longer grainy.
- (A few sugar crystals may remain.)
- Pour into clean jars or plastic containers; cover with tight-fitting lids.
- Let stand at room temperature 24 hours or until set.
- Freeze up to 1 year or refrigerate up to 3 weeks.
