Ingredients

  • 1 head of fresh cauliflower
  • 14 cup of low fat margarine or 14 cup butter
  • 4 ounces low-fat cream cheese
  • 2 tablespoons of minced garlic
  • 2 tablespoons of chopped chives
  • 34 cup parmesan cheese
  • salt and pepper

Method

  • Steam the cauliflower in a bit of water until it gets really soft and mushy.
  • Put the cauliflower minus the stem part into a large mixing bowl.
  • Add the rest of the ingredients.
  • Beat with a hand mixer until you get the consistency of creamy mashed potatoes.
  • Serve immediately.
  • Leftovers may be reheated in the in the microwave and taste just as good if not better the next day!
