Ingredients
- 8 large potatoes
- 1 small block (8 oz) Velveeta, cubed
- 1 cup mayonnaise
- 1/2 cup onion (if desired)
- 6 slices raw bacon, cut into pieces
Method
- Boil potatoes until soft. Peel when cool enough to handle, but still warm, and cut into cubes.
- Mix mayonnaise, onion, and cheese with potatoes & put into 13x9 pan.
- Top with bacon.
- Bake uncovered at 325 degrees for 1 hour.
