Ingredients

  • Crust:
  • 1 cup uncooked, grated cauliflower
  • 1/4 cup Eggbeaters
  • 2 garlic cloves, crushed
  • 1/2 cup skim-milk shredded Mozzarella
  • 1 teaspoon olive oil
  • Topping:
  • 1/4 cup chopped tomatoes
  • 1/4 cup low-carb tomato sauce
  • 2 teaspoons Italian seasonings
  • 1 garlic clove, crushed
  • 1/2 cup skim-milk Mozzarella
  • 1 Morningside Farms sausage patty, cooked and chopped up

Method

  • Preheat over to 450 degrees.
  • Shred cauliflower in food processor.
  • Measure out 1 cup, not compacted down.
  • In a bowl, mix cauliflower, Eggbeaters, crushed garlic, cheese, and olive oil.
  • Spray cookie sheet with non-stick spray and thinly spread cauliflower mixture into a round pizza shape.
  • Bake uncovered for 15-20 minutes, then turn broiler on and broil for 1-2 minutes until brown.
  • Chop tomatoes and add 1 teaspoon tomato sauce, seasonings, and crushed garlic. Mix all together and top the cauliflower crust.
  • Sprinkle with remaining grated cheese and the crumbled sausage. Broil pizza until cheese has melted.
