Ingredients
- 8 bacon strips
- 1 large onion, sliced
- 1 catfish, cut into chunks
- minced parsley
- salt and pepper to taste
- 1 Tbsp. butter or margarine
- 2 Tbsp. flour
- 1 c. milk
- 4 egg yolks
Method
- Fry the bacon until crisp, remove and drain on a paper towel. Saute onion in the fat.
- In a cooking pot, cover the fish with water; add parsley, salt and pepper.
- Simmer until fish pieces are tender.
- Melt the butter in a saucepan, stir in the flour and cook for about 1 minute.
- Remove this from heat, stir in the milk and add this to the fish soup.
- Beat the egg yolks and add 2 tablespoons hot liquid to them and stir into the soup.
- Simmer a few minutes, add the bacon and serve.
