Ingredients

  • 8 bacon strips
  • 1 large onion, sliced
  • 1 catfish, cut into chunks
  • minced parsley
  • salt and pepper to taste
  • 1 Tbsp. butter or margarine
  • 2 Tbsp. flour
  • 1 c. milk
  • 4 egg yolks

Method

  • Fry the bacon until crisp, remove and drain on a paper towel. Saute onion in the fat.
  • In a cooking pot, cover the fish with water; add parsley, salt and pepper.
  • Simmer until fish pieces are tender.
  • Melt the butter in a saucepan, stir in the flour and cook for about 1 minute.
  • Remove this from heat, stir in the milk and add this to the fish soup.
  • Beat the egg yolks and add 2 tablespoons hot liquid to them and stir into the soup.
  • Simmer a few minutes, add the bacon and serve.
