Ingredients
- 8 large carrots
- 12 cup honey
- 4 tablespoons oil
- lemon rind, grated
- 1 sweet potato
- 4 tablespoons sugar
- ginger
Method
- Slice carrots and sweet potatoes and cook 10 minutes in boiling salted water just to cover.
- Add honey, sugar and oil.
- Cook gently until liguid is absorbed and carrots slightley glazed,about 30 minutes.
- Sprinkle with lemon rind and ginger.
