Ingredients

  • 1 pt. scraped, chopped carrots
  • 2 well beaten eggs
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 2 level tsp. sugar
  • 1/2 c. cream

Method

  • Boil carrots in sweetened water until tender, then mash as well as possible.
  • Add other ingredients; pour into a buttered ring mold.
  • Place mold in a pan of hot water.
  • Bake in a moderate oven for about 30 minutes.
  • Can be served with creamed peas, adding 1/2 cup of finely cut blanched almonds to peas.
  • Serves 6.
