Ingredients
- 1 pt. scraped, chopped carrots
- 2 well beaten eggs
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 2 level tsp. sugar
- 1/2 c. cream
Method
- Boil carrots in sweetened water until tender, then mash as well as possible.
- Add other ingredients; pour into a buttered ring mold.
- Place mold in a pan of hot water.
- Bake in a moderate oven for about 30 minutes.
- Can be served with creamed peas, adding 1/2 cup of finely cut blanched almonds to peas.
- Serves 6.
