Ingredients
- 15 carrots
- 1 celery rib, large dice
- 1 onion, large dice
- 2 tablespoons fresh ginger, minced
- 1 orange, juice of
- 4 cups vegetable broth or 4 cups water
- 1 tablespoon butter
- salt and pepper
Method
- In a small amount of oil sweat celery and onion until translucent.
- Add carrots and continue to sweat.
- Add ginger, orange juice and broth.
- Simmer until carrots are very tender.
- Puree and pass through a mesh strainer.
- Season to taste and finish with a pat of butter.
