Ingredients

  • 1/2 c. shortening
  • 1/2 c. soft butter
  • 3/4 c. sugar
  • 2 eggs
  • 1 c. mashed cooked carrots
  • 2 c. flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 3/4 c. shredded coconut

Method

  • Preheat oven to 400°.
  • Mix shortening, sugar, eggs and carrots. Blend in flour, baking powder and salt. Stir in coconut. Drop dough by teaspoonfuls about 2-inches apart onto lightly greased baking sheet.
  • Bake 8 to 10 minutes or until no imprint remains when touched lightly. Remove from baking sheet immediately and cool.
  • Makes about 4 dozen cookies.
