Ingredients
- 2 c. flour
- 2 tsp. baking powder
- 2 c. shredded carrots
- 1 c. vegetable oil
- 2 c. pecans
- 2 tsp. cinnamon
- 1 tsp. salt
- 2 c. sugar
- 4 eggs (unbeaten)
- 1 c. raisins
Method
- Sift all dry ingredients (except sugar).
- In another bowl, mix sugar and oil.
- Alternate adding other dry ingredients and eggs to oil and sugar mixture.
- Add carrots and nuts to mixture.
- Bake at 350° for 1 hour in a Bundt pan.
