Ingredients
- 2 cups self-rising flour
- 1 cup oil
- 3 eggs
- 1 cup coconut
- 2 cups grated carrots
- 1 tsp. cinnamon
- 2 cups sugar
- 1/2 cup nuts
- 10 or 12 oz. can crushed pineapple
Method
- Mix flour and cinnamon.
- Beat oil, sugar, eggs, add to flour and cinnamon beat smooth.
- Add pineapple, carrots, coconut, and nuts.
- Grease pan with margarine.
- Bake at 350 degrees for 50 minutes.
- Top with cream cheese frosting.
