Ingredients
- 2 c. flour
- 2 c. sugar
- 2 c. coconut
- 2 tsp. soda
- 2 tsp. cinnamon
- 1 tsp. salt
- 3 eggs, beaten
- 1 1/2 c. oil
- 2 c. grated carrots
- 2 c. chopped walnuts
- 1 (8 oz.) can crushed pineapple
- 2 tsp. vanilla
Method
- Mix first six ingredients together in a large bowl.
- Add remaining ingredients.
- Pour into greased and floured 11 x 15-inch pan or 8 x 8-inch pan, plus 18 cupcakes or 3 (9 x 4-inch) loaf pans.
- Bake at 325° or 350° for 45 to 50 minutes.
- While baking make syrup and boil 5 minutes.
