Ingredients
- 1 1/2 c. oil
- 2 c. sugar
- 3 eggs
- 2 c. flour
- 1 tsp. soda
- 1 tsp. cinnamon
- dash of salt
- 1 c. crushed pineapple, undrained
- 2 c. grated carrots
- 1 c. walnuts
- 1 c. coconut
- 1/2 tsp. vanilla
Method
- Combine first 3 ingredients, mix well.
- Add to this the next four ingredients (flour, etc.).
- Stir in the last five ingredients. Pour into greased and floured 9 x 13-inch pan.
- Bake at 350° for 50 to 60 minutes (metal pan) or 325° for 45 to 50 minutes (glass pan). Do not overbake.
- Cool, then frost.
