Ingredients

  • 1 1/2 c. oil
  • 2 c. sugar
  • 3 eggs
  • 2 c. flour
  • 1 tsp. soda
  • 1 tsp. cinnamon
  • dash of salt
  • 1 c. crushed pineapple, undrained
  • 2 c. grated carrots
  • 1 c. walnuts
  • 1 c. coconut
  • 1/2 tsp. vanilla

Method

  • Combine first 3 ingredients, mix well.
  • Add to this the next four ingredients (flour, etc.).
  • Stir in the last five ingredients. Pour into greased and floured 9 x 13-inch pan.
  • Bake at 350° for 50 to 60 minutes (metal pan) or 325° for 45 to 50 minutes (glass pan). Do not overbake.
  • Cool, then frost.
