Ingredients

  • 1 c. grated carrot (about 3 medium carrots, peeled)
  • 3 tsp. grated ginger or 1 tsp ground ginger
  • 1 c. brown sugar
  • 1/2 c. vegetable oil
  • 1/4 c. applesauce
  • 3 T soy milk or water
  • 2 tsp flax seed, optional
  • 1 1/2 c. flour
  • 1 tsp. salt
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1 1/2 tsp. vanilla extract

Method

  • Preheat oven to 350 degrees.
  • In a medium bowl, sift flour and spices, being careful to sift the baking powder to avoid clumps.
  • Mix wet ingredients, flax seed and grated ginger in a large bowl with a whisk. Add sugar and continue to mix.
  • Gradually add dry ingredients until mixture is smooth. It will seem a bit dry. Mix in grated carrot (it will now have a much smoother, more moist consistency) and pour into 2 greased mini-loaf pans and bake for 30-40 minutes, or until top has risen and browned and toothpick or knife stuck in the middle of the loaf comes out clean.
