Ingredients

  • 1 14 cups whole wheat flour
  • 1 tablespoon wheat germ
  • 1 tablespoon ground flax seeds
  • 1 teaspoon cinnamon
  • 12 teaspoon baking powder
  • 12 teaspoon baking soda
  • 14 teaspoon sea salt
  • 14 cup chopped walnuts
  • 14 cup raisins
  • 1 teaspoon vanilla
  • 1 cup grated carrot
  • 12 cup applesauce
  • 2 large eggs, slightly beaten
  • 14 cup rice milk
  • 14 cup canola oil

Method

  • Preheat oven to 350 degrees F.
  • In a large bowl, combine the first 9 ingredients.
  • In a separate bowl, combine the remaining ingredients and mix well.
  • Add the wet ingredients to the dry ingredients stirring just to mix.
  • Do not over mix.
  • Spoon into muffin cups sprayed with non-stick spray or use cupcake papers, filling about 3/4 full.
  • Bake about 20 minutes or until a toothpick inserted in the center comes out clean.
