Ingredients
- 1 c. raw carrots, grated
- 1 Tbsp. onion, grated
- 1 c. grated cheese
- 1 beaten egg
- 1 c. cooked rice
- 1 tsp. salt
- 1/4 tsp. pepper
Method
- Boil carrots and onion 10 minutes in as little water as possible.
- Add remaining ingredients and pour into buttered casserole, dot with butter.
- Place casserole in pan of hot water and bake in 400° oven for 40 minutes.
- Serve with chicken sauce: Use a can of cream of chicken soup and 1/2 to 2/3 cup milk and heat.
