Ingredients
- 3 medium sweet potatoes
- 1/3 c. brown sugar, firmly packed
- 1/2 c. hot water
- 1/4 tsp. salt
- 3 Tbsp. melted butter or margarine
- 1/4 c. shredded coconut
Method
- Cook sweet potatoes in skins until nearly tender.
- Peel and halve.
- Arrange
- in
- greased
- shallow 1 quart baking pan. Combine sugar,
- water, salt and butter; pour over sweet potatoes.
- Bake in moderate oven at 350° for 15 minutes, basting occasionally. Sprinkle
- top
- with
- coconut;
- bake
- 10 minutes longer or until lightly browned.
