Ingredients

  • 3 medium sweet potatoes
  • 1/3 c. brown sugar, firmly packed
  • 1/2 c. hot water
  • 1/4 tsp. salt
  • 3 Tbsp. melted butter or margarine
  • 1/4 c. shredded coconut

Method

  • Cook sweet potatoes in skins until nearly tender.
  • Peel and halve.
  • Arrange
  • in
  • greased
  • shallow 1 quart baking pan. Combine sugar,
  • water, salt and butter; pour over sweet potatoes.
  • Bake in moderate oven at 350° for 15 minutes, basting occasionally. Sprinkle
  • top
  • with
  • coconut;
  • bake
  • 10 minutes longer or until lightly browned.
