Ingredients

  • 2 Tbsp. olive oil
  • 1 large onion, chopped
  • 1 1/2 tsp. salt
  • 1 1/2 tsp. oregano
  • 1 tsp. cumin
  • 1 tsp. coriander
  • 1/2 tsp. cinnamon
  • 1/2 tsp. ground cloves
  • 1/4 tsp. pepper
  • pinch of cardamon
  • 1 lb. ground beef
  • 1/2 lb. ground pork
  • 1/2 lb. ground veal
  • 2 eggs, beaten
  • 1 c. bread crumbs (preferably sourdough)
  • 3 tsp. garlic
  • 2 Tbsp. butter
  • 1 large red or green bell pepper

Method

  • Heat oil in heavy large skillet over medium heat.
  • Add next 9 ingredients and saute until onion is translucent, about 7 minutes. Transfer to large bowl.
  • Mix in all remaining ingredients except butter and pepper.
  • Spoon mixture into loaf pan, patting top to even.
  • Bake 1 hour.
  • Pour off accumulated juices on top and bake an additional 15 minutes until brown.
  • Meanwhile, melt butter in small heavy skillet over medium heat.
  • Add bell pepper and saute until tender.
  • Unmold meat loaf.
  • Sprinkle with bell pepper.
  • Cut into slices and serve.
