- 2 Tbsp. olive oil
- 1 large onion, chopped
- 1 1/2 tsp. salt
- 1 1/2 tsp. oregano
- 1 tsp. cumin
- 1 tsp. coriander
- 1/2 tsp. cinnamon
- 1/2 tsp. ground cloves
- 1/4 tsp. pepper
- pinch of cardamon
- 1 lb. ground beef
- 1/2 lb. ground pork
- 1/2 lb. ground veal
- 2 eggs, beaten
- 1 c. bread crumbs (preferably sourdough)
- 3 tsp. garlic
- 2 Tbsp. butter
- 1 large red or green bell pepper
Method
- Heat oil in heavy large skillet over medium heat.
- Add next 9 ingredients and saute until onion is translucent, about 7 minutes. Transfer to large bowl.
- Mix in all remaining ingredients except butter and pepper.
- Spoon mixture into loaf pan, patting top to even.
- Bake 1 hour.
- Pour off accumulated juices on top and bake an additional 15 minutes until brown.
- Meanwhile, melt butter in small heavy skillet over medium heat.
- Add bell pepper and saute until tender.
- Unmold meat loaf.
- Sprinkle with bell pepper.
- Cut into slices and serve.
