Ingredients
- 3 lb. chicken, cut into pieces
- 2 Tbsp. olive oil
- 2 tsp. lemon pepper
- 4 Tbsp. lemon juice
- 1 Tbsp. honey
- 1 tsp. oregano leaves
- 1/2 tsp. thyme leaves
- pinch of red pepper
- 2 tsp. minced garlic
Method
- Cut off all excess fat from chicken. Peel skin from breasts and thighs.
- Rub baking dish with 1 tablespoon oil.
- Rub chicken with garlic.
- Place skin side down in dish.
- sprinkle with lemon pepper.
- Combine remaining oil, lemon juice, honey, oregano, thyme and red pepper.
- Bake at 400° for 30 minutes. Turn pieces over and bake another 20 minutes.
- (Decrease cooking time by 10 minutes if using breasts only.)
- Baste chicken occasionally during last 20 minutes.
- Spoon with pan drippings before serving.
- Good served with rice or noodles and steamed broccoli.
- Makes 4 servings.
