Ingredients

  • 3 lb. chicken, cut into pieces
  • 2 Tbsp. olive oil
  • 2 tsp. lemon pepper
  • 4 Tbsp. lemon juice
  • 1 Tbsp. honey
  • 1 tsp. oregano leaves
  • 1/2 tsp. thyme leaves
  • pinch of red pepper
  • 2 tsp. minced garlic

Method

  • Cut off all excess fat from chicken. Peel skin from breasts and thighs.
  • Rub baking dish with 1 tablespoon oil.
  • Rub chicken with garlic.
  • Place skin side down in dish.
  • sprinkle with lemon pepper.
  • Combine remaining oil, lemon juice, honey, oregano, thyme and red pepper.
  • Bake at 400° for 30 minutes. Turn pieces over and bake another 20 minutes.
  • (Decrease cooking time by 10 minutes if using breasts only.)
  • Baste chicken occasionally during last 20 minutes.
  • Spoon with pan drippings before serving.
  • Good served with rice or noodles and steamed broccoli.
  • Makes 4 servings.
