- 1 1/2 lb. round steak, cubed
- 2 Tbsp. shortening
- 1/2 c. water
- 5 medium zucchini squash, diced
- 1 medium onion, sliced into rings
- 2 Tbsp. shortening
- 2 c. corn, drained
- 1/2 c. chopped green chile
- 2 tsp. garlic salt
- 1 tsp. salt
- 1 c. Cheddar cheese, grated
Method
- Brown steak in shortening.
- Reduce heat, add water, cover and simmer until tender, about one hour.
- Add more water as needed. Saute squash and onion in shortening until tender.
- Add corn, green chile and seasonings.
- Add meat and meat stock to vegetables. Simmer about 20 minutes.
- Add grated cheese.
- Stir to melt.
- Yields 8 servings.
