Ingredients

  • 1 1/2 lb. round steak, cubed
  • 2 Tbsp. shortening
  • 1/2 c. water
  • 5 medium zucchini squash, diced
  • 1 medium onion, sliced into rings
  • 2 Tbsp. shortening
  • 2 c. corn, drained
  • 1/2 c. chopped green chile
  • 2 tsp. garlic salt
  • 1 tsp. salt
  • 1 c. Cheddar cheese, grated

Method

  • Brown steak in shortening.
  • Reduce heat, add water, cover and simmer until tender, about one hour.
  • Add more water as needed. Saute squash and onion in shortening until tender.
  • Add corn, green chile and seasonings.
  • Add meat and meat stock to vegetables. Simmer about 20 minutes.
  • Add grated cheese.
  • Stir to melt.
  • Yields 8 servings.
