- 2 c. cooked rice
- 1 medium green pepper, chopped
- 4 1/2 oz. cooked shrimp, rinsed and drained
- 1/2 c. sliced fresh mushrooms
- 1 hard-cooked egg, finely chopped
- 2 Tbsp. snipped parsley
- 1/4 c. salad oil
- 1/4 c. vinegar
- 1/4 c. water
- 2 tsp. paprika
- 2 tsp. prepared horseradish
- 1/2 tsp. onion salt
- 1/8 tsp. ground red pepper
- 6 lettuce leaves
Method
- In a mixing bowl, gently stir together rice, green pepper, shrimp, mushrooms, hard-cooked egg and parsley.
- Set aside.
