Ingredients
- 1 c. sliced mushrooms
- 5 green onions, sliced
- 1 Tbsp. butter
- 1 large tomato, chopped
- 1 c. S&W cajun sauce
- 1 Tbsp. lemon juice
- 1/4 tsp. salt
- 1 lb. raw medium size shrimp, shelled and deveined
- 2 c. rice, uncooked
Method
- In a large skillet saute mushrooms and green onions in butter for 4 to 5 minutes.
- Add tomato, lemon juice, salt and S&W Cajun sauce; heat to a boil.
- Stir in shrimp.
- Simmer, uncovered, for 5 to 6 minutes, or until shrimp turns pink.
- Stir frequently.
- Boil rice on side, by package directions.
- Serve over rice.
