Ingredients

  • 1 c. sliced mushrooms
  • 5 green onions, sliced
  • 1 Tbsp. butter
  • 1 large tomato, chopped
  • 1 c. S&W cajun sauce
  • 1 Tbsp. lemon juice
  • 1/4 tsp. salt
  • 1 lb. raw medium size shrimp, shelled and deveined
  • 2 c. rice, uncooked

Method

  • In a large skillet saute mushrooms and green onions in butter for 4 to 5 minutes.
  • Add tomato, lemon juice, salt and S&W Cajun sauce; heat to a boil.
  • Stir in shrimp.
  • Simmer, uncovered, for 5 to 6 minutes, or until shrimp turns pink.
  • Stir frequently.
  • Boil rice on side, by package directions.
  • Serve over rice.
