Ingredients

  • 1 each cabbage whole head of, cored and sliced
  • 8 ounces carrots chopped
  • 2 each onions diced
  • 6 stalks celery diced
  • 1 each shallots finely chopped
  • 6 each scallions, spring or green onions sliced
  • 1 envelope onion soup mix
  • 3 dashes balsamic vinegar
  • 6 cloves garlic minced
  • 1/2 each lemon juice of
  • 16 ounces v8 juice
  • 28 ounces tomatoes, canned diced
  • 1 x salt and black pepper to taste

Method

  • In a large stock pot, add all of the ingredients and bring to the boil over high heat.
  • Reduce heat, and simmer for one hour.
  • Cover and let sit for at least one hour, the longer you let it sit the better it will taste.
  • Keep in mind that this soup doesn't taste all that great during to cooking process, it's not until it has had time to simmer and sit that it will take on the flavor of a minestrone soup.
  • You can add other spices and vegetables just be sure the water content is high in the veggies and the calories are low, such as Zucchini.
