Ingredients

  • 1 c. white sugar
  • 1/2 c. brown sugar
  • 1/3 c. white corn syrup
  • few grains salt
  • 1/2 c. cream
  • 1/3 c. butter
  • 3/4 c. chopped pecans
  • 1 tsp. vanilla

Method

  • Mix white sugar, brown sugar, syrup and salt and cream together.
  • Cook to boiling point, stirring constantly.
  • Continue cooking over simmer same burner, stirring occasionally to 238° or until few drops form a soft ball when dropped into cold water. Remove from heat.
  • Add butter; cool at temperature without stirring until lukewarm or until the hand can be held on bottom of pan.
  • Add nuts and vanilla.
  • Beat until candy will hold its shape.
  • Drop from a teaspoon onto waxed paper.
  • Makes about 3 dozen.
