- 2 cups uncooked couscous
- 1 tablespoon margarine
- 2 cups boiling water
- 14 cup plain soy yogurt
- 14 cup olive oil
- 1 teaspoon white wine vinegar
- 1 teaspoon curry powder
- 14 teaspoon turmeric
- 1 12 teaspoons salt
- 1 teaspoon fresh ground black pepper
- 1 teaspoon cinnamon
- 12 cup diced baby carrots
- 12 cup minced parsley
- 14 cup sliced scallion
- 14 cup diced small red onion
- 12 cup almonds, toasted and sliced
- 12 cup dried cranberries
Method
- Place couscous in a medium bowl with margarine.
- Pour boiling water over the couscous.
- Cover tightly and allow to soak for five minutes.
- Fluff with a fork.
- In a small bowl, whisk together olive oil, vinegar, curry, turmeric, salt, cinnamon and pepper.
- Pour mixture over couscous and mix well with a fork.
- Add remaining ingredients; mix well and season to taste.
- Serve at room temperature.
