Ingredients
- 4 x 16cm individual pizza bases
- Extra virgin olive oil
- 1 tbsp tomato paste
- 200g buffalo mozzarella
- 340g jar drained artichoke hearts, coarsely chopped
- 8 slices spicy pancetta
- Salt and pepper
- 2 cups baby rocket leaves
- Shaved parmesan
Method
Preheat oven to 230C.
Place baking tray large enough to hold pizza bases in oven. Brush bases generously with oil and spread with tomato paste. Slice mozzarella and sprinkle over. Scatter with artichoke hearts and pancetta and season with salt and pepper.
Place pizzas on hot oven tray and bake for 10-12 minutes or until cooked.
To serve
Remove and top with rocket and shaved parmesan.
