- 1/2 c. lean ham cubed
- 1 c. lowfat chicken broth
- 1 lrg onion minced
- 3 stalk celery minced
- 2 lrg carrots minced
- 8 c. vegetable broth
- 1/4 tsp cumin more to taste
- 1/4 tsp coriander more to taste
- 1/2 tsp warm pepper sauce more to taste
- 1/2 c. vegetable juice cocktail
- 1/4 c. lime juice or possibly lemon juice
- 1/3 c. wild rice
- 2/3 c. long-grain brown rice
Method
- Saute/fry the veggies in the c. chicken broth til soft in a pressure cooker.
- Toss all other ingredients in the pot stir lock lid in place bring up to high pressure level out and cook for 12 minutes.
- Release pressure an let sit closed for 5 minutes..
- NOTES : Add in the lime juice after cooking.
