Ingredients

  • 1/2 c. lean ham cubed
  • 1 c. lowfat chicken broth
  • 1 lrg onion minced
  • 3 stalk celery minced
  • 2 lrg carrots minced
  • 8 c. vegetable broth
  • 1/4 tsp cumin more to taste
  • 1/4 tsp coriander more to taste
  • 1/2 tsp warm pepper sauce more to taste
  • 1/2 c. vegetable juice cocktail
  • 1/4 c. lime juice or possibly lemon juice
  • 1/3 c. wild rice
  • 2/3 c. long-grain brown rice

Method

  • Saute/fry the veggies in the c. chicken broth til soft in a pressure cooker.
  • Toss all other ingredients in the pot stir lock lid in place bring up to high pressure level out and cook for 12 minutes.
  • Release pressure an let sit closed for 5 minutes..
  • NOTES : Add in the lime juice after cooking.
