Ingredients

  • 1 None ciabatta loaf, cut into thin slices
  • 8 tbsp olive oil
  • 2 cloves garlic, minced
  • 4 None tomatoes, finely chopped
  • 1 None small red onion, peeled and finely chopped
  • 1 tbsp fresh basil, chopped

Method

  • Mix the olive oil with the garlic and brush on to ciabatta slices. Bake at 400°F for 10 minutes until golden and just crisp.
  • Mix together tomatoes, red onion, and basil. Season with salt and freshly ground black pepper.
  • Serve ciabatta slices warm, topped with tomato relish.
