Ingredients
- 2 c. Ww flour
- 1/3 c. Skim lowfat milk
- 1/3 c. Brown sugar
- 1 tsp Vanilla
- 1 Tbsp. Baking pwdr
- 2 x Egg whites
- 1 c. Mashed very ripe banana (about 2 large)
- 1 Tbsp. Brown sugar
- 1 Tbsp. Toasted wheat germ
Method
- To make the topping, stir together the brown sugar and wheat germ and set aside.
- Combine the flour, brown sugar and baking pwdr and stir to mix well.
- Add in the banana, skim lowfat milk, vanilla extract and egg whites and stir just till the dry ingredients are moistened.
- Fill muffin tins 3/4 full and sprinkle over topping.
- Bake at 350 for 14 to 16 minutes.
- Let sit 5 minutes.
