Ingredients

  • 2 c. Ww flour
  • 1/3 c. Skim lowfat milk
  • 1/3 c. Brown sugar
  • 1 tsp Vanilla
  • 1 Tbsp. Baking pwdr
  • 2 x Egg whites
  • 1 c. Mashed very ripe banana (about 2 large)
  • 1 Tbsp. Brown sugar
  • 1 Tbsp. Toasted wheat germ

Method

  • To make the topping, stir together the brown sugar and wheat germ and set aside.
  • Combine the flour, brown sugar and baking pwdr and stir to mix well.
  • Add in the banana, skim lowfat milk, vanilla extract and egg whites and stir just till the dry ingredients are moistened.
  • Fill muffin tins 3/4 full and sprinkle over topping.
  • Bake at 350 for 14 to 16 minutes.
  • Let sit 5 minutes.
