Ingredients

  • 1 cup ~ Brown Rice ~ uncooked
  • 4 T. ~ Extra Virgin Olive Oil
  • 1 ~ Small Zucchini ~ shredded
  • 1 ~ Large Onion ~ sliced thin
  • 1/2 ~ Head of Cabbage~ sliced thin
  • 1 ~ Medium Sweet Potato ~ shredded
  • 1 ~ Small Kohlrabi ~ shredded
  • 1 ~ Large can of Muir Glen diced Tomatoes with basil and garlic
  • 3 ~ Larger peppers ~ cleaned and tops removed

Method

  • 1. Cook Rice ~ until slightly tender
  • 2. Saute all veggies in olive oil,sea salt,and freshly ground pepper
  • 3. Add the tomatoes
  • 4. Add the rice
  • 5. Fill 3 larger bell peppers. Take the extra filling and scoop it around the filled peppers in covered pot or casserole dish
  • 6. * spread tomato paste on top of all
  • 7. Cover and bake @ 350 until your peppers are tender
  • 8. Enjoy!!
