Ingredients
- 1 cup ~ Brown Rice ~ uncooked
- 4 T. ~ Extra Virgin Olive Oil
- 1 ~ Small Zucchini ~ shredded
- 1 ~ Large Onion ~ sliced thin
- 1/2 ~ Head of Cabbage~ sliced thin
- 1 ~ Medium Sweet Potato ~ shredded
- 1 ~ Small Kohlrabi ~ shredded
- 1 ~ Large can of Muir Glen diced Tomatoes with basil and garlic
- 3 ~ Larger peppers ~ cleaned and tops removed
Method
- 1. Cook Rice ~ until slightly tender
- 2. Saute all veggies in olive oil,sea salt,and freshly ground pepper
- 3. Add the tomatoes
- 4. Add the rice
- 5. Fill 3 larger bell peppers. Take the extra filling and scoop it around the filled peppers in covered pot or casserole dish
- 6. * spread tomato paste on top of all
- 7. Cover and bake @ 350 until your peppers are tender
- 8. Enjoy!!
