Ingredients

  • 2 doz. graham crackers
  • 1/2 c. soft butter
  • 1/2 c. sugar
  • 1 pkg. lime Jell-O
  • 1 pkg. red Jell-O
  • 1 pkg. lemon Jell-O
  • 1 1/2 c. hot water (for each pkg.)
  • 1 pkg. plain gelatin
  • 1 c. pineapple juice
  • 1/2 c. sugar
  • 1/4 c. cold water
  • 1 tsp. vanilla
  • 2 c. heavy cream

Method

  • Crush crackers, add butter and sugar.
  • Mix well and line a 1 x 13 x 2 1/2-inch pan, reserving a small amount of crumbs for topping.
  • Dissolve each package of Jell-O in hot water and in separate bowls or flat pans.
  • Chill in pans until firm.
  • Then cut into 1/2-inch squares.
  • Soften plain gelatin in cold water; add hot pineapple juice and cool.
  • Whip cream and sugar and vanilla.
  • Fold in cooled gelatin and pineapple mixture.
  • Fold in Jell-O cubes; pour into crumb-lined pan.
  • Sprinkle on rest of crumbs; chill 6 to 8 hours until very firm.
