Ingredients

  • 8 cups broccoli florets (about 2 large heads)
  • 1 Tbs. soy margarine or unsalted butter
  • 2 tsp. minced fresh garlic
  • 1 tsp. minced fresh ginger
  • 1/2 cup fresh orange juice
  • 1/4 tsp. salt
  • 18 tsp. freshly ground black pepper

Method

  • Steam broccoli, covered, 6 minutes, or until crisp-tender.
  • Meanwhile, melt margarine in small skillet over medium heat.
  • Add garlic and ginger, and cook, stirring often, 1 minute.
  • Add orange juice, salt and pepper; bring to a boil.
  • Reduce heat to low, and cook, uncovered, 2 minutes.
  • Pour orange sauce over broccoli, and toss well.
  • Serve hot.
