- 8 cups broccoli florets (about 2 large heads)
- 1 Tbs. soy margarine or unsalted butter
- 2 tsp. minced fresh garlic
- 1 tsp. minced fresh ginger
- 1/2 cup fresh orange juice
- 1/4 tsp. salt
- 18 tsp. freshly ground black pepper
Method
- Steam broccoli, covered, 6 minutes, or until crisp-tender.
- Meanwhile, melt margarine in small skillet over medium heat.
- Add garlic and ginger, and cook, stirring often, 1 minute.
- Add orange juice, salt and pepper; bring to a boil.
- Reduce heat to low, and cook, uncovered, 2 minutes.
- Pour orange sauce over broccoli, and toss well.
- Serve hot.
