Ingredients

  • 1 bunch broccoli, cut into flowerets
  • 2 slices whole wheat bread
  • 3 tablespoons butter
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 1 garlic clove, minced
  • 12 teaspoon kosher salt
  • 12 teaspoon fresh ground black pepper

Method

  • Lightly toast the bread.
  • Put the bread in a food processor or blender and chop into bread crumbs.
  • Melt the butter in a small skillet.
  • Add the bread crumbs and saute over medium heat until toasted.
  • Add the lemon zest, lemon juice, garlic, salt and pepper.
  • Continue cooking, stirring constantly, until dry.

  • Steam the broccoli.
  • Top broccoli with the lemon breadcrumbs, and mix together.
  • Serve.
