Ingredients
- 1/4 c. salad oil
- 1 medium onion, sliced
- 1 large potato, diced
- 1 garlic clove, minced
- 2/3 c. celery, diced
- 1 tsp. pepper
- 3 c. chopped broccoli or thawed 10 oz. frozen
- 5 c. chicken broth
- 1/4 c. fresh chopped basil or 1 Tbsp. dry basil
Method
- In large saucepan heat salad oil.
- Add onion; saute until tender (10 minutes).
- Add potato, celery, garlic and pepper.
- Cook 10 minutes, stirring occasionally.
- Stir in broccoli, broth and basil.
- Cover and simmer 20 minutes.
- Into blender put 1/2 soup; cover and blend until smooth.
- Repeat with remaining soup.
