Ingredients

  • 1/4 c. salad oil
  • 1 medium onion, sliced
  • 1 large potato, diced
  • 1 garlic clove, minced
  • 2/3 c. celery, diced
  • 1 tsp. pepper
  • 3 c. chopped broccoli or thawed 10 oz. frozen
  • 5 c. chicken broth
  • 1/4 c. fresh chopped basil or 1 Tbsp. dry basil

Method

  • In large saucepan heat salad oil.
  • Add onion; saute until tender (10 minutes).
  • Add potato, celery, garlic and pepper.
  • Cook 10 minutes, stirring occasionally.
  • Stir in broccoli, broth and basil.
  • Cover and simmer 20 minutes.
  • Into blender put 1/2 soup; cover and blend until smooth.
  • Repeat with remaining soup.
