Ingredients
- 4 Tbsp. butter
- 1/4 c. flour
- 1/4 c. onion, chopped
- 2 to 3 c. milk
- broccoli pieces
- 1/2 c. Cheddar, shredded (optional)
- salt and pepper to taste
Method
- Melt butter in soup pot over medium heat. If using onions, saut onions in the butter until translucent; add flour and stir and cook over low for about 1 minute. Gradually add 2 cups of milk, stirring constantly and heat through. Add more milk as needed to obtain a creamy consistency. Add cheese if desired. Add salt and pepper to taste.
