Ingredients
- 1 tbsp vegetable oil
- 1 tsp coriander seeds (crushed)
- 500g broccoli (cut into florets)
- 1 carrot (finely sliced)
- 1 clove garlic (crushed)
- 1 tsp ginger (grated)
- 100g snow peas (trimmed and halved)
- 2 tbsp hoisin sauce
- 1 tbsp lime juice
- 1 tbsp crisp fried onions (available at Asian food stores)
Method
Heat 1 tbsp vegetable oil in a wok, add 1 tsp coriander seeds (crushed) and stir for 1 minute.
Add 500g broccoli (cut into florets), 1 carrot (finely sliced), 1 clove garlic (crushed) and 1 tsp ginger (grated). Stir-fry over high heat until carrot
is tender and crisp (adding 1 tbsp water if necessary). Add 100g snow peas (trimmed and halved) and stir for 1 minute. Combine 2 tbsp hoisin sauce and 1 tbsp lime juice in a small bowl and pour over vegetables. Toss until well coated and serve sprinkled with 1 tbsp crisp fried onions (available at Asian food stores).
