Ingredients

  • 1 1/2 lbs broccoli
  • 1/2 red onion, thinly sliced (about 1 C)
  • 1/2 C golden raisins
  • 2 T red wine vinegar
  • 2 t yellow mustard
  • 1/2 C canola oil
  • 1T sugar
  • Salt & ground black pepper, to taste,
  • 1/2 C pecans, toasted & chopped

Method

  • If necessary, trim ends off the broccoli, use a vegetable peeler to peel the skin off the stalk. Slice the broccoli into thin slices & small florets. (There should be about 1 lb after trimming.)
  • Place the broccoli in a large bowl and add sliced onions & raisins. Set aside.
  • Combine vinegar, mustard, oil, sugar, salt, and pepper in a separate bowl. Add to the broccoli mixture & toss to combine. Cover & refrigerate at least 1 hour or overnight for the flavors to blend.
  • When ready to serve, toss again & garnish with pecans.
