Ingredients

  • 8 oz. elbow macaroni
  • 1 c. chopped broccoli (fresh) or cooked frozen
  • 4 Tbsp. fat-free margarine
  • 2 Tbsp. flour
  • 2 c. skim milk
  • 1 c. fat-free Cheddar cheese
  • 1 c. fat-free Mozzarella cheese
  • 1/2 tsp. salt
  • 1/2 tsp. cayenne pepper
  • 1/2 c. seasoned bread crumbs

Method

  • Cook macaroni as directed. Steam fresh broccoli 6 minutes or cook frozen as directed.
  • In saucepan, melt margarine.
  • Stir in flour until thick and smooth. Remove from heat.
  • Add milk, salt, pepper, all the Mozzarella and 1/2 of the Cheddar.
  • Stir well until cheese melts.
  • Add macaroni, crumbs, remaining Cheddar and broccoli; mix thoroughly.
  • Turn into an 8 x 8-inch shallow baking dish sprayed with nonstick spray. Bake at 375° until bubbly, 10 to 15 minutes.
